4th Iteration of Coffee Kombucha complete

I finished brewing my 4th batch of coffee kombucha on the 16th and today I started my fifth batch. Only after five days of brewing, the kombucha had a strong coffee flavor. It was almost like drinking a cold brew with a slight tang. The strong coffee brew definitely came through. For those who love a strong coffee without excess caffeine, this may be the brew for you. I also did a second fermentation adding 1-2 ounces of additional brewed coffee and 1 tbsp of sugar in each jar for two days. Unfortunately I didn’t get any fizz. I didn’t want to add anything that might alter the coffee flavor. I will need to get creative in order to retain the coffee flavor I want and create a nice fizzy drink.

For the fifth iteration I cold brewed about 1/4 cup of Colombian and 1/4 cup of Mexican coffee beans for 12 hrs. I will ferment for seven to eight days. I may or may not do a second fermentation depending on the flavor profile after the first fermentation.
