Delectable Pomegranate Hibiscus Green Tea Kombucha

After seven days of fermentation my Hibiscus Green Tea kombucha was ready! The Hibiscus Green Tea kombucha was from a Pomegranate Hibiscus Green Tea kombucha to kickstart the fermentation process. The kombucha was delicious, a perfect balance of sweet and sour. Floral notes from the hibiscus tea with a more subtle pomegranate flavor. It was absolutely perfect and without having to do a second fermentation. I did happen to do a second fermentation with about 1/2 of the kombucha made. I added about a 1/3 a cup of pomegranate juice to each jar, around 20 ounces of kombucha for the large jars, and around 15 ounces of kombucha for the smaller jars. I will ferment for two to three days and see which ones have the best flavor. I think I might like the kombucha with only the single fermentation better than the ones with the added pomegranate juice. I will find out soon enough.

Onto the next batch! Today I started my next batch and this time I added 1/2 cup of pomegranate juice as I believe this will be enough to provide a moderate pomegranate flavor that will mix well with the floral notes of the hibiscus tea. With cold weather brewing it may be difficult to keep the temperature at 70 F (21.1 C) in my house, which is the average during the winter. I may have to accept a slower brew at 65 F (18.3 C) and see how things turn out. I’m positive it will turn out well, I’m curious how it will affect end product flavor. Time will tell.
