The Art of the Single Fermentation

While most tend to try and develop flavor during the second fermentation, I hold a contrarian view and try to build all my flavor in one fermentation. While I do like a fizzy drink, the extra time and energy is not worth it for me. I care more about creating unique flavors with only a few ingredients. A balanced mix of sweet and sour with lemon and mint would be perfect. That would be my dream brew. Perfecting it may take a couple iterations. Maybe dozens, we shall see. Instead of using lemon which might be harmful to the SCOBY during the first fermentation, I will use dried lemon leaves, a few mint leaves and steep alongside green tea. Now that my Gunpowder Green tea hibiscus brew has finished, this is my next concoction and I’m hopeful it may be my best yet.
